New Summer Fun Recipes

Cashew Hummus

2 cans of garbonzo/chick peas

1/4 cup of raw cashews

1 tomatoe

1 jalopeno

1 clove of garlic

1/2 lemon juice squeezed into mixture

1 teaspoon of olive oil

lemon pepper, salt and pepper to taste

Run on variable 8 to 10 until mixture is creamy.  Note you may also want to add sundried tomatoes for extra zing in this dish.©

Teri’s Balsamic Vinegarette

1/4 cup olive oil

1/3 cup balsamic vinegar

3 fresh basil leaves

1/3 cup parmeson cheese

1/3 of an avocado peeled

lemon pepper salt and pepper to taste

Put switch on Variable speed pulse from 1 to 8 several times until all ingredients are blended. Serve.©

Chocolate covered Acai and Blueberry Ice Cream

1/2 cup old orchard apple cherry juice concentrate thawed

1/2 cup french vanilla coffee mate creamer or half and half with vanilla extract

1 cup spectrum blend frozen fruit

1 1/2 cups of ice

1 handful baby carrots and purple cabbage

Run on high for 45 to 60 seconds or until all ingredients are creamy. Not you may also want to add protien powder to this recipe.  I recommend either Whole Nectar Organic Soy or Raw Brown Rice Protein.  With the protein added you could use this as a meal supplement.©

Green Summer Cooler

1 cup green grapes

1 large slice of pineapple

1 large handful of spinach

1/4 of an apple

1/2 banana

1 teaspoon Agave nectar or honey

1 1/2 cups of ice

Run on high for 60 to 90 seconds.  Serve©.
